At a minimum, current public liability insurance (commonly $10-$20M) and workers compensation if they employ staff. Ask to see the certificate of currency - restoration involves working at heights over your home, so this matters.
What warranty should I expect?
A reputable restorer backs their workmanship for around 7-10 years in writing, plus the coating manufacturer's separate product warranty. Get both documented and make sure you know who to call if something fails.
Should I pay a deposit?
A modest deposit to cover materials is reasonable, but never pay the full amount upfront. Use a progress or completion-based schedule and only release the final payment once you've inspected the finished roof.
How do I know the re-pointing was done properly?
Good re-pointing means the ridge caps are re-bedded where needed and finished with a flexible pointing compound, not paint or rigid cement smeared over cracked old mortar. Ask for close-up photos of the ridge lines before and after.
